Rice Krispie Snowmen Treats

This recipe for Rice Krispie treats will make 12 rounds (using a Wilton round cookie cutter) from a 9 x 13 pan. You can adjust the size depending how large or small your round cookie cutter is. (This recipe makes 12 regular sized squares). The recipe for the bars comes off a box of Rice Krispies cereal, probably the best way to make them!

Ingredients

  • ¼ cup butter or margarine, I use butter
  • 1 ten oz bag regular-sized marshmallows
  • ½ teaspoon pure vanilla extract, this is optional but it makes them taste SO much better!
  • 6 cups Rice Krispies cereal
  • ¾ cup white candy melts, I used Wilton but these can be found at any craft store or Walmart/Target
  • White decorating icing, I used Wilton in a tube
  • Black gel icing, I used Wilton in a tube
  • Orange M&M’s, for the nose
  • Blue Sugar Gems, I used Wilton
  • Blue and white colored sugar crystals
  • Shredded coconut
  • Jumbo Snowflake Sprinkles, I used Wilton

Instructions

  1. In a large saucepan, melt butter over low heat.
  2. Add the marshmallows and stir until completely melted. Remove from heat.
  3. Stir in the pure vanilla extract.
  4. Gradually add the Rice Krispies cereal, stirring until well coated.
  5. Press into a buttered 9 x 13 pan ( a buttered spatula really helps the process)
  6. Cool for one hour.
  7. Using a round cookie cutter, make the Rice Krispies into 12 round shapes. Set aside.
  8. Microwave the white candy melts in 15 second increments until smooth and creamy.
  9. Dip the Rice Krispies rounds into the melted candy mixture, evenly covering the entire front side of each round (or you can cover the entire round, if your prefer).
  10. Lay the candy-dipped rounds on a wire rack to cool and set for at least 5 minutes. (I placed mine in the fridge to hurry the process along). If you covered the entire round, increase the set time to 15 minutes.
  11. Squeeze white icing onto the top of each round (spreading evenly along the top) and sprinkle with the blue sugar gems or white or blue sugar crystals for the hats. Here is where you can be as creative as you would like to be. There are so many possibilities!
  12. To add fur at the bottom of your hat, take your white tube of icing and pipe a big line at the bottom of the colored hat. Sprinkle shredded coconut or white sugar crystals on top of the icing. Let set for 5 minutes.
  13. Apply a small amount of icing to the back of a jumbo snowflake sprinkle and affix to the top of each hat. Let set for a few minutes.
  14. Use the black icing gel to pipe the eyes and smiles on each snowman face.
  15. Cut an orange M&M in half and apply icing to each half and apply to each face for the snowman nose.  Let set for at least 5 minutes.
  16. Optional: You could insert lollipop sticks into each round and make pops out of them. Or, you could place each Rice Krispie round in a cellophane bag with ribbon and give out as treats. They would even look great on a platter for the kids to grab and go! ENJOY!
