These are not only delicious and perfect for a quick lunch, they are super easy to make a few dozen at a time for those who like to cook once a month or just have extras in the freezer! We whipped these up and flash froze them BEFORE baking, so the following directions are exactly what we followed.

Ingredients & Directions
Bagels (regular or mini sized)
Sauce (I used jarred, but you can certainly make your own)
Choice of cheese (mozzarella, Parmesan, etc)
Choice of toppings (pepperoni, sausage, olives, mushrooms, etc)Prepare an assembly line for your ingredients. Split the bagels and line up on a wax paper covered cookie sheet. Spread your sauce, add toppings, then cheese, then spread a small dollop of sauce on top. This sauce on top will help ‘glue’ the toppings into place so your pizzas don’t lose any yummy goodness in their storage container.
When you have a full pan, stick into the freezer until frozen. Once frozen, bag your pizzas up. Label your bags if making different variations so everyone can grab their favorite.
Bake from frozen at 400* until cheese is melted and bagels are crispy. (I believe we did about 10 minutes and had nice crispy bagels, they were perfect!)
Remember when buying your bagels, that a bag of FIVE bagels will actually make TEN pizzas, so buy accordingly. I snagged ours on sale at Kroger for $1 a bag!
