The other day we had a friend over. I had no idea what to make for dinner, but a quick trip the grocery gave me the idea for grilled pizza sandwiches.
Ingredients:
Bread, buttered
Pizza Sauce
Shredded cheese (I used a mix of mozzarella and “pizza” variety Kroger brand)
Pepperoni
Other toppings you would have on pizza
Using a griddle, grill pan, or sandwich maker (I used my HOT PINK! George Foreman sandwich maker), assemble your sandwich like so:
Place buttered side of bread down first, then a layer of cheese, sauce, toppings, sauce, cheese, etc (aka AS MUCH AS YOU WANT!). I always make sure that the cheese is the first layer, and the last, to act like the “glue”. Grill until both sides of sandwich are as brown and crispy as your prefer.
FYI: The George Foreman sandwich maker creates a triangular sandwich shape with a crease…
I think this helps keep the pizza goods inside, because the ones I made on the grill pan were MESSY! So be CAREFUL when flipping. I used two spatulas and some quick flipping, but the mess is worth it!
These were eaten quickly, and the Hubs asked for them again the next day for lunch!
An easy and delicious lunch for kids and grown-ups!
