GFCF Easy Peanut Butter Cookies

Gluten free, casein free peanut butter cookies

1 cup peanut butter – I used sunflower butter
1 cup packed light brown sugar
1 egg
1 tsp baking powder (optional) – I did used for this batch
3/4 cup GFCF chocolate chips – YUM!

Heat oven to 350 degrees. Mix ingredients. Drop onto cookie sheet by the spoonful. Bake about 8-10 minutes.

WARNING: This are VERY VERY SOFT when they come out of the oven. Be careful! I placed them on a plate and not a wire rack to cool. They do firm up a bit, but they are sooooo good!
