Cookies! Sugar cookies! Toffee sugar cookies! Oh these are begging to be dunked into some milk and to enjoy after the kids are tucked into bed. This recipe will make about 3 dozen cookies, so plenty to stash away!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 and 1/2 sticks unsalted butter, softened to room temperature
  • 1 large egg
  • 1 1/4 tsp vanilla extract
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 and 1/2 cups health toffee bits

Instructions

  1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
  2. In a separate bowl, mix together the flour, cornstarch, baking soda, and salt.
  3. Using a mixer or handheld mixer, beat together the butter and sugar.
  4. Add in the egg and vanilla extract.
  5. Using a plastic spatula, fold in the toffee bits.
  6. Roll cookie dough into balls and bake for 9 minutes.
  7. Let cool for 2-3 minutes before transferring to a cooling rack.
