Two-Bite Flourless Chocolate Coffee Gems

Do you love chocolate and coffee? These little two-bite gems are a perfect way to satisfy your chocolate craving and the coffee really brings out the flavor. This recipe will make 24 gems and you can freeze them for later!

Two-Bite Flourless Chocolate Gems with Coffee

What you will need:

Mini muffin tins (recipe makes approximately 24 gems)
Sifter
½ cup white chocolate (If you want a more intense flavor, you can also use
bittersweet dark chocolate instead)
½ stick unsalted butter
2 tsp. vanilla extract
6 drops pure orange essential oil
½ cup unsweetened cocoa powder
1 tbsp. powdered sugar
1 & ½ tbsp. ground coffee (Folgers instant coffee would be perfect for this recipe)
2/3 cup sugar
3 eggs

Directions:

Preheat oven to 375 degrees and line your mini muffin tins or coat with spray.

Next thing you need to do is chop your chocolate and microwave it in a glass measuring cup. I do it in 20 to 25 second intervals. Then stir in between. It takes just a couple rounds and it’s all done, and no long process of stirring over the stove and burning it!

Next, melt your butter in the same fashion & then combine with the chocolate in a mixing bowl, whisking well to be sure there are no lumps left.

Add the eggs and then start adding in your sugar slowly, whisking as you go until it is well blended with chocolate and butter mixture.

Add in your Instant coffee, vanilla and essential oil drops. Mix well.

Now you need to sift the cocoa powder. It will go into the rest of the ingredients, so I like to just sift it right over the mixing bowl to save one more dirty dish.

Now, add your batter to the muffin tins. I personally use a coffee scoop to transfer it, it’s the perfect size!

Bake until gems have risen, about 12- 15 minutes.

Test with toothpick, but these are tricky, being flourless, so expect a little bit of batter on there, but not runny batter.

Remove from oven and dust with the powdered sugar while warm.
