I live for easy meals. Between work, school, household matters, and sports I sometimes look at the clock and realize I have no idea what we’re having for dinner. Or it’s one of those nights where the kids want something super easy, but it doesn’t sound like it will hit the spot for me. With the new Prep+Pared meal kits available at Kroger, I can not only try something entirely new but I can have it ready in about 20 minutes.
The Prep+Pared meal kit comes with everything you need outside of maybe oil, salt, and pepper. You bring it home and everything is already measured, it’s chopped, it’s diced, it’s individually packaged and ready for you to just open and follow the recipe directions. With the price point less than $20 for a meal that serves two, it’s also a really great date night option!
The first step in our recipe was to mix together the marinade. Again, with everything already measured and packaged individually, you simply take the sauce packets, spices, and diced red bell pepper and mix them together, then add the beautiful salmon fillets.
While that marinates for 10 minutes, you have time to pre-heat one tablespoon of oil in a pan over medium-high heat. You also have time to work on the cool quinoa salad, which does involve dicing the cucumber. There’s no running around for ingredients, so this step comes together easily.
As soon as that salmon hits the hot pan, it smells amazing. Oh, my goodness, I have to be honest with you, I have never cooked salmon this way. I always bake my salmon, so this was new to me and is now my absolute favorite way to prepare salmon. After cooking for 3-5 minutes on each side, you add the rest of the marinade from your bowl into the pan and heat thoroughly. Make sure your salmon reaches 145* before you call it done and start plating.
Each plate will have one salmon fillet, drizzled with some of the pan sauce (or just spoon that on, it’s so good!), and your split the cool quinoa salad between the two. Take your avocado, slice, and set atop your salad. Voila! Twenty-minute dinner, little to no prep, and an easy cleanup!
