Italian Style Meatball Cups

Italian Style Meatball Cups We love Italian food. Pasta night really is the best night! It’s also one of the easiest dinners for a busy family because the younger crowd doesn’t need a fancy Italian feast, a big plate of spaghetti and meatballs pleases just about anyone. I wanted to get a bit creative and have fun with our food a little bit, but also keep it easy because we are a busy family! This was a hit with the kids, and really easy to whip together.

Spaghetti was always my favorite as a little girl. One of my favorite pictures is from my first birthday  where I’m covered in spaghetti noodles waiting for my birthday cake. A pasta loving girl from the start!

Using Carando® Meatballs, canned biscuits and a favorite pasta sauce, you can make these in about 30 minutes. Thirty minutes to dinner is a definite win in my house as both of us work and no one has time to spend much longer in the kitchen. Plus, no one wants to wait that long because kids never have any patience! The leftovers are great for lunch and can be easily packed for school or work! You can call these Meatball Cups or Meatball Sub Cups, but I call them delicious. Melty cheese, soft and flaky biscuits, and delicious meatballs all in one little package. The perfect busy night dinner!

Ingredients:

24 Carando® Meatballs 24 canned biscuits
Jar (or homemade) pasta sauce (we used marinara sauce)
Cheese, optional (we used cut up string cheese, you can use shredded mozzarella, Italian blend, parmesan, etc) Muffin tin and non-stick spray

Directions:

Preheat your oven to 375 and spray your muffin tins with non-stick spray. Take each biscuit and flatten with the palm of your hand, then gently press into muffin tin to form a cup. Repeat for every cup, one biscuit per cup.

In each cup, add a sprinkle of cheese and 1 Carando® Meatball and press into biscuit dough just a bit.

Bake for about 20 minutes, until meatballs reach 165 internal temperature. Your biscuits will be brown and slightly crisp but you have to go by the meatball temperature to gauge doneness here. Top with more cheese straight from the oven or let cool and serve with sauce for dipping.
