Slow Cooker Lasagna
This was my first time trying a slow cooker lasagna recipe. I needed something easy, and also something that would be ready to eat once we got home from appointments and running errands. The slow cooker has become my best friend for nights we need an easy dinner, and this recipe is definitely a hit! A little prep work in the morning means a home cooked and delicious dinner!

Easy Slow Cooker Lasagna Recipe

Ingredients

  • 1 box of lasagna noodles
  • 1 jar of favorite sauce
  • Your choice of meat
  • I used cooked meatballs we made the other day, just thawed them and then crumbled. You could use ground beef, ground turkey, ground chicken, sausage, whatever you'd like
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Optional: Diced veggies, spinach, fresh basil... this is a "Make your favorite lasagna, but in the slow cooker!" dish

Instructions

  1. I lined my slow cooker with a Reynolds liner for easy cleanup. If you don't use these, I suggest spraying the bottom and sides with cooking spray to prevent sticking
  2. Spoon just enough sauce into the slow cooker to cover the bottom
  3. Take lasagna noodles (you will need to break them to fit nicely) and create a layer of noodles
  4. Add a layer of sauce (NOTE: I took my crumbled meat and mixed it with the sauce, just easier then adding a layer of meat)
  5. Spoon on ricotta cheese and sprinkle with mozzarella and parmesan cheeses
  6. Layer of sauce
  7. Noodles
  8. Sauce
  9. Cheese...
  10. You get the picture, right? Add your optional ingredients wherever you'd like. Maybe mix the veggies with the sauce and meat?
  11. When you have layered your lasagna how you like, take your now empty sauce jar (or can) and add about 1/4-1/2 cup of water and give it a good shake. There's no point in wasting any of the sauce stuck to the sides that your spoon just can't quite reach. Pour that over the lasagna (this adds moisture for the noodles).
  12. Cook on HIGH for 4 hours or LOW 6-8 hours

My top layer was a layer of mozzarella cheese and parmesan. Mine was in the slow cooker from 11a to just about 3:30p. The top was a bit brown, but the cheese was melted and bubbly.

To serve, just use a big spoon to ‘cut’ portions and dish out.

This was such an easy one, I will definitely be doing this again!
