Crockpot Chicken and Noodle Mash

The falling leaves and chilly weather means the arrival of fall is here. But do you know what else these changes bring? Crockpot season! Now is the time to haul those crockpots out and look forward to many “fix it” and “forget it” meals. A perfect example of a savory and simple crockpot meal you can enjoy this season is this Crockpot Chicken and Noodles Mash.

It only requires a few ingredients, and in no time flat you can have a homemade dish that tastes like you spent all day in the kitchen. My favorite crockpot meals are easy, comforting, and always seem to become favorites amongst the kids.

Crockpot Chicken and Noodles Mash

Crockpot Chicken and Noodles Mash

Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 4-5 chicken breasts, Boneless, skinless, frozen is perfect
  • 2 regular size cans of cream of chicken soup
  • 2 regular size cans of chicken broth
  • 1 stick of butter
  • ½ cup of milk
  • 1 bag of egg noodles, I use a 16 oz. bag of frozen but you are free to use dried if you wish
  • Salt and pepper to taste
  • Instant mashes potatoes OR homemade mashed potatoes, 2 pounds of potatoes cooked, peeled, cubed and mashed with 1 cup of milk, salt, pepper, and butter to taste

Instructions

  1. Pour the soup, milk, and broth into the crockpot.
  2. Add the chicken (if you opted to add vegetables place them in first) on top of the soup mixture.
  3. Cook the contents on low for 6-7 hours.
  4. After about 6 hours, remove the chicken and shred it into large chunks.
  5. Return the chicken to the crockpot and add the noodles. Continue to cook on low for another 2 hours.

Notes

You can of course tweak this recipe any way you wish. For example, you can use low sodium broth, or fat free cream of chicken soup. You can also add freshly chopped onion, celery, or carrot if you want a little bit of color and extra flavor in the mix.

 

Don’t forget to stir 4-5 times while cooking this tasty dish so the contents stay well mixed and do not stick. Serve by placing a nice and generous spoonful of mashed potatoes on your plate and top it with the creamy chicken and noodles. Sprinkle with salt and pepper to taste.
