There is really no other fitting name I could think of for this meal but grub! It’s such a good and yummy warm-to-your-toes meal but with a little spice. As I was finishing this meal up, I was sure it was going to be bland. But as we started to eat it, I was so surprised and delighted with the flavor. It’s like thick chicken noodle soup with some spice, and I love the meatless aspect as it saves money. Lentils are such a meaty bean that I love to use them in meatless dishes.

Lentil & Rice Grub
Ingredients
- 3 Cups Chicken Broth
- 2 Cups Lentils
- 1 1/2 Cups Rice
- 1/2 tsp Crushed Red Pepper Flakes
- 1/2 tsp Ground Ginger
- 1 Tbsp Cilantro
- 1 Can Coconut Milk
Instructions
- Place all ingredients except coconut milk in a large saucepan and bring to a boil.
- Once boiling, reduce heat to simmer and let it sit for approximately 30 minutes or until the rice and lentils are soft and cooked (will depend on the type of lentil you are using).
- Add coconut milk and heat through and serve.
We enjoyed our meal with a nice slice of homemade toast and butter. Even my son enjoyed this and it was easy for him to eat and digest (8 months). We mixed a spoonful of it with some pureed veggies to tame the small spice kick and he really enjoyed it. This dish also reheats well!
