Slow Cooker Pulled Pork Pancakes

I know, pancakes and pulled pork sound like they don’t go together and it sounds like I’ve lost a few marbles but I’m telling you, it’s really no different than a pulled pork sandwich. The buttermilk pancakes, soft and fluffy, soak up all of the delicious BBQ sauce… oh come on, you know you want to try this!

So let’s talk making pulled pork and pairing it with buttermilk pancakes. It’s outside the box for sure, but it’s a great way to enjoy pancakes outside of breakfast, too. I love making pulled pork in my slow cooker, it’s very “set it and forget it”, and with my busy days, that’s the perfect way for dinner to happen.

The pancake part of this recipe is easy – follow the package instructions for microwaving the pancakes. Microwaving makes them soft and fluffy.

Slow Cooker Pulled Pork

1 pork shoulder (I used a “picnic roast”)
1/2 can of favorite dark colored soft drink
Pinch of salt and pepper
1 cup favorite BBQ sauce (I went spicy!)

Add all ingredients to your slow cooker and cook on low for 8-10 hours or high 4-6 hours until the meat reaches 170 degrees and is tender. Remove the meat and using two forks, pull the pork apart removing any large pieces of fat. Once all shredded, add the remainder of your sauce.

Layer the saucy pulled pork between 3 pancakes (a serving is 3, which is perfect) and enjoy!

This is an awesome time to experiment with sauces – go mild or go for hot, the choice is yours.
