Frankenstein Cupcakes

Ingredients

  • ½ C. butter, softened to room temperature
  • 2 eggs
  • 1 C. milk
  • 1 tsp. white vinegar
  • 1 ½ C. flour
  • 1 C. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/3 C. cocoa powder

Wilton products needed

  • large candy eyes
  • 12. oz bag green candy melts
  • 12 oz. bag black candy melts
  • 12 oz. bag dark brown candy melts
  • edible markers

Instructions

  1. Preheat the oven to 350 degrees and grease 12ct. cupcake tin.
  2. In a medium bowl combine the ½ cup of softened butter, 2 eggs, milk, sugar and vinegar. Beat until smooth.
  3. In a separate bowl combine the flour, baking soda, salt and cocoa powder. Mix well and slowly fold the dry ingredients into the wet ingredients stirring until smooth and all lumps are gone.
  4. Pour the batter evenly into the cupcake tin and bake 19-21 minutes. Around 19 minutes insert a clean toothpick into the cupcakes and if it comes out clean they are done.
  5. Allow the cupcakes to cool completely prior to decorating.

Frankenstein Directions

  1. Separate 4 oz. of each Wilton candy melt into a separate *microwave safe dish. Heat in 20 second increments stirring every 20 seconds until melted. This should only take about 2 minutes with 4 oz.
  2. Repeat with the other colors. *I used little ramekin dishes for this.
  3. Take one cupcake at a time and dip the top into the green melted chocolate. Use a butter knife to smooth the top out and place two large candy eyes on top. Set aside and repeat with your other cupcakes. Let them set about 10 minutes, enough so the chocolate hardens.
  4. Next, take one cupcake at a time and dip the top portion right above the eyes into the dark brown melted chocolate – enough to give Frank some hair! It's gonna be flat so use the toothpick to bring down a few chocolate drips to get rid of the bowl haircut. ;)
  5. Set aside and repeat with your other cupcakes and let set again.
  6. Scoop some of the black melted chocolate into the small sandwich baggie and make a small snip on the end. Squeeze on Franks mouth and set aside.
  7. Repeat with all the other cupcakes and let set.
  8. Last but not least, use the red edible Wilton marker to draw on Franks scar above his eyes. Looking back I would have put his eyes a little lower but all in all I think they turned out pretty darn cute!

Notes

Makes approximately 12 Frankenstein cupcakes. 1 cupcake = 1 serving.
